Tri-Millet Idli (by Rashmi Dubli)

🛒 Ingredients:

🌾 1/2 cup foxtail millet

🌾 1/2 cup jowar (sorghum)

🌾 1/2 cup bajra (pearl millet)

🫘 1/2 cup urad dal

🌱 1/4 tsp fenugreek seeds

🌟 1/2 tsp turmeric powder

🧂 Salt to taste

👩🍳 Instructions:

💧 Soak:
Wash and soak all millets together. Soak urad dal with fenugreek seeds separately for 6–8 hours.

🔪 Grind:
Grind the urad dal to a fluffy batter. Grind the millets to a slightly coarse batter. Mix both batters together, add turmeric, and combine well.

🕒 Ferment:
Allow the batter to ferment for 8–10 hours in a warm spot.

🍶 Prepare:
Add salt to the fermented batter, mix gently, and pour into greased idli molds.

🔥 Steam:
Steam the idlis for 12–15 minutes until fully cooked.

🍽 Serve:
Serve hot with chutney or sambar.
